BROCCOLI DELIGHT SALAD

1 large bunch fresh broccoli cut in small pieces (4 – 5 cups)

1 cup raisins

1/4 cup diced red onion

10 strips bacon fried and crumbled

1 cup sunflower seeds

Toss the above together in a large bowl.  Top with dressing.

DRESSING:

1 cup mayonnaise

1/3 cup sugar

2 tablespoons vinegar

put in container and shake and put over salad.  Let salad sit with dressing for a day, if possible, before serving.

Optional for salad ingredients:

1 can water chestnuts (sliced and drained)

1 pkg fresh sliced mushrooms

1/2 cup sliced green onions

FROZEN ORANGE JUICE SALAD

2 (3oz) packages orange jello

1 cup boiling water

1 large can frozen orange juice concentrate

1 cup cold water

1 (8.25oz) can mandarin oranges

1 15.5 oz can crushed pineapple

Dissolve Jello in boiling water.  Mix in frozen orange juice and dissolve.  Add cold water and fruit (don’t drain).  Stir and refrigerate.

3-LAYER SALAD

1st LAYER:

1 3-oz package lemon jello

1 cup crushed pineapple (reserve juice for 2nd layer)

2 sliced bananas

1 1/2 C small marshmallows

make lemon jello in 9 x 9 pan. put in refrigerator to set.  add crushed pineapple, banana and marshmallow according to directions on jello box.

2nd LAYER:

1/2 cup sugar

2 tablespoon flour

1 egg

2 tablespoon melted margarine

1 cup liquid (pineapple juice and water mixed

Cook 2nd layer ingredients till thick and then cool.  when cool, add 1/2 cup whipped cream.   Spread 2nd layer over Jello layer once Jello layer has set.

3rd  LAYER:

grated American or Cheddar cheese (for looks).

COTTAGE CHEESE & ORANGE JELLO SALAD

1 small (8 oz) container small curd cottage cheese

1 (3 oz) orange gelatin

1 small mandarin oranges drained

1 small carton Cool Whip  (thawed)

Sprinkle dry Jello over cottage cheese.  Mix thoroughly and let stand.  Add drained mandarin orange sections to mixture.  Add thawed Cool Whip and mix thoroughly.  Chill.

–other Jello flavors and fruits may be used.  pineapple jello and crushed pineapple;  raspberry Jello with frozen raspberries, etc.

TACO SALAD

1 pound ground turkey or hamburger

1 head lettuce

1 – 2 tomatoes

1 can chili beans (Ranch style beans drained)

1 can drained kidney beans (if you prefer rather than or in addition to the chili beans)

1/2 – 1 onion chopped (if desired)

taco chips or Fritos

avocado chopped (LOTS — if desired)

cheese — any amount

Fry meat till brown.  Drain.  return meat to pan.  add chili beans and simmer 5 minutes.  Meanwhile, add rest of ingredients into a separate large bowl (except chips).  pour meat mixture over lettuce mixture.  Add chips just before serving.  may be served with any salad dressing.
